作り始めた由来
子供からお年寄りまで食べられる
あまり辛くないキムチをモットーに

素材へのこだわり
＜白菜＞
「信州望月高原」産の甘味の強い白菜を使用
原菜にもこだわりをもち寒暖差を生かした
甘味の強い白菜を自社栽培しています。

今栽培している白菜の７割をキムチに使用。
固い白菜は塩漬けしても、柔らかくならず
自社栽培の肉厚で甘い白菜を使用しています。

土壌消毒をせず、土づくりにこだわった栽培。
野菜が持ってる自然のうまみを形成していく菌を
殺さずに。

＜唐辛子＞
韓国産の辛くない唐辛子を使用。
近くに辛い品種と交わると辛くなってしまうため
山奥で栽培しています

＜ヤンニョム＞
味の決め手は「ヤンニョム」。
化学調味料一切使用せず。
調味料でうま味を出す商品が多い中、原材料の味を
引き出す為の当店の大切なこだわり

＜発酵＞
野菜にも乳酸菌がある。唐辛子にも乳酸菌がある。
それらが交わってつくりだす、ヤンニョムに漬け込む
大事な約２日間。

野菜も生きてる、キムチも生きてる
漬物だけど、生き物だという意識を持ち
手間と時間をかける時間

さらなるこだわり
イワシの塩辛を入れないとキムチじゃない！
富山県の氷見の漁港で採れたてのイワシを
すぐ塩漬けしてから作ってます

白菜の塩漬けまで手作業
何から何まで、誰も真似できない手間暇。
容器に入れるのも手。ヤンニョムを入れて
混ぜて混ぜて・・
機械に頼らず、手でやることにこだわってます。
