開放的な豚舎で飼われているので、ストレスが少ない環境ですくすく育っています。魚でさえストレスで味が大きく左右します。哺乳類である豚ともなれば、なおさらでしょう。

鹿児島の黒豚は、もともとは、
琉球から鹿児島に伝わった島豚（中型）
　　　　　　　×
イギリス系バークシャー種
を掛け合わせたものです。

現在、主に流通している豚は、大型で生産性のよい大型種のアメリカ系バークシャー種と掛け合わせたものです。

ますやの黒豚は、本来の黒豚の味に近づけるために
・筋繊維が柔らかい
・脂質にうまみがある
という特徴を持つ、イギリス系バークシャー種と掛け合わせたものを生産しています。

(お召し上がり方)
【準備】
冷凍でのお届けですのでお肉を解凍してお召し上がりください

お肉は冷蔵庫で解凍するかお急ぎの場合は、流水で解凍してください。

1.お鍋に昆布を入れたお出汁を
沸騰させないくらい(80~85℃)まで温める。
(ぐつぐつ煮込むとお肉の旨味が抜けるため)

2.お肉を一枚ずつピンク色から白色になるまでしゃぶしゃぶしてお召し上がりください。
